California Turkey Burgers


Ingredients

  • 1 Pound GROUND TURKEY
  • 1/4 Cup Italian parsley, chopped, divided
  • 1/4 Teaspoon ground pepper
  • To Taste salt
  • 1/4 Cup plain low-fat yogurt
  • 4 Each hamburger rolls, split and lightly toasted, if desired
  • 4 Each curly leaf lettuce, washed and chilled
  • 4 Slices tomato
  • 4 Tablespoons carrot, peeled and coarsly grated
  • 4 Tablespoons alfalfa sprouts, washed and chilled

Directions

  1. Prepare charcoal for gilling or preheat broiler
  2. Gently mix ground turkey with 2 tablespoons of the parsley and pepper in a mixing bowl
  3. Gently shape into 4 patties, about 1-inch thick
  4. Grill or broil patties approximately 4 inches from the source of the heat, turning once, 14 to 15 minutes until done in center and internal temperature reaches 165 degrees F
  5. Meanwhile, combine yogurt and remaining 2 tablespoons of parsley in a small bowl, stirring until blended
  6. Place one lettuce leaf on each roll
  7. Arrange turkey burger on top of lettuce; top each with a tomato slice, some carrot, alfalfa sprouts and yogurt. Serve at once.
