Diabetes Friendly Recipe Ð Banana Delight

Here is a recipe for a creamy, rich dessert made with bananas, while keeping in mind the special dietary requirements for a diabetic. ItÕs a simple recipe and I guarantee will be a treat for your taste buds.


Ingredients:

  • 7 Graham Crackers, Cinnamon (4 sections make one whole cracker)
  • 16 oz Softened Fat Free Cream Cheese
  • 6 Packets Equal (one gram each)
  • 1 cup Fat-free topping whipped
  • 2 Bananas sliced
  • 1 tsp cinnamon powder

Directions:

  1. Line a 9×13-inch pan with graham crackers so that the cinnamon top of the crackers faces down. You might need to break some crackers to fit in the pan.
  2. With the help of a mixer on high speed, beat the softened cream with Equal for a couple of minutes.
  3. Next, blend the whipped topping into this mixture. With a spatula
    gently, fold in the banana slices into the mixture.
  4. Spread the
    banana-cream mixture evenly over graham crackers. Ensure that the
    bananas are well covered with the cream mixture so that they do not get
    discolored.
  5. Lastly sprinkle cinnamon powder evenly on the top.
  6. Serve
    the dessert, chilled.

Apple Dumplings

Ingredients

  • 2 Tbsp firmly packed light brown sugar
  • 1-1/2 tsp cinnamon
  • 1 tsp
    cornstarch
  • 1 tsp vanilla extract
  •  6 Macintosh apples, peeled and cored
  •  6 square egg roll wrappers
  • Cooking spray

Directions

  1. Preheat the oven to 375¡F.
  2. Spray six muffin cups with non-stick cooking spray.
  3. In a large bowl, combine the sugar, cinnamon, cornstarch, vanilla, and 1 Tbsp water.
  4. Add the apples; toss to coat.
  5. Place one apple in the center of each egg roll wrapper.
  6. Bring the corners up to the top of the apple, pressing and folding to seal the edges.
  7. Stand each dumpling in a muffin cup and lightly spray the tops with non-stick cooking
    spray.
  8. Bake until golden, about 20 minutes.
  9. Cool on a rack 15 minutes; serve warm.
