Diabetic Fruit Cakes

Ingredients

2 cups water
2 cups raisins,
seedless
1 cup unsweetened applesauce  
2 large eggs
2 tablespoons liquid
sweetener
3/4 cup vegetable
oil
1 teaspoon baking
soda
2 cups flour,
all-purpose
1 1/4 Teaspoons cinnamon
1/2 teaspoon nutmeg

Directions

1. Cook raisins in water until water is gone.

2. Add the applesauce, eggs, sweetener and oil and mix well.

3. Blend in the other ingredients which have been sifted t ogether.

4. Add vanilla. Pour into greased and floured pans, preferably loaf pans
.

5. Bake about 1 hour at 350 degrees or until done.

Diabetic Health Cookies

Ingredients

1 cup raisins,
seedless
1/2 cup dates, chopped
 
1/2 cup apples, chopped
1 cup water
1/2 cup vegetable
shortening
2 large eggs, beaten
2 teaspoons sugar
substitute
1 teaspoon vanilla
extract
1 teaspoon baking
soda
1 cup flour,
all-purpose
3/4 cup nuts, chopped
 

Directions

1. Boil raisins, dates, and apples in water for 3 minutes.

2. Add shortening to melt, then cool and add rest of ingredients with
the nuts last.

3. Mix well.

4. Drop by teaspoons onto cookie sheet. Bake at 350 degrees for 10 to
12 minutes.

5. Store in refrigerator in an airtight container.

1/2 cup butter, room temperature

sugar substitute
1 1/4 cup flour,

coffee
1 teaspoon baking
powder
1/4 cup raisins,
seedless
1/4 cup nuts, chopped
2 large egg whites, room temperature


Directions

1. Cream together margarine and sugar until light and fluffy.

2. Add vanilla
and sugar substitute to creamed mixture and mix lightly.

3. Stir together
flour, cocoa, coffee and baking powder to blend. Add to creamed mixture
and mix at medium speed 1-2 minutes or until blended.

4. Add raisins and
nuts to dough and mix lightly.

5. Add egg whites to dough and mix until egg
white are adsorbed into the dough.

6. Drop dough by tablespoonful onto a
cookie sheet that has been lines with aluminum foil or sprayed with PAM.

7. Using your fingers dipping in cold water, shape dough into round cookies
about 1/4″ thick.

8. Spread the dough carefully because the finished
cookie will be the shape of the dough after it is baked.

9. Bake at 375 F
for about 12 minutes, or until the dough springs back when touched.

10. Transfer from the hot cookie sheet onto a wire rack and cool to room
temperature.

  • 1 each egg white
  •  1/4 cup sugar or (replace sugar with 1/16 Tsp Stevia plus 1/3 cup unsweetened applesauce)
  • 1 teaspoon almond extract
  •  1/4 cup wheat germ

Directions

  1. Preheat oven to 325 degrees F.
  2. In a deep bowl, beat egg whites on low speed of an electric mixer until frothy.
  3.  Beat on high speed until stiff.
  4.  Gradually beat in sugar (or Stevia) and then almond extract.
  5. Fold in wheat germ (and applesauce.)
  6. Drop mixture by 1/2 teaspoonsful onto a cookie sheet that had been sprayed with
    a nonstick cooking spray and dusted lightly with flour.
  7.  Put the cookies in the oven and immediately reduce the temperature to 200
    degrees F
  8. Bake 1 hour.
  9. Turn off heat, and leave cookies in oven to cool.

  •  1/4 cup artifical sweetener
  •  1 cup sour cream
  • 1 each egg
  • 1 cup blueberries fresh
  • 2 teaspoons lemon zest grated

    Directions

    Preheat oven to 425 degrees F and grease

  • 12 cup muffin pan.

Directions

  1. Combine Bisquick and 1/4 cup artificial sweetener.
  2.  Make a well in centre of mixture and add sour cream and egg all at once.
  3. Beat with a fork until all ingredients are well combined.
  4.  Gently fold in fresh blueberries.
  5. Put 1/4 cup of batter into each muffin cup.
  6. In a small bowl, combine lemon peel and 2 tablespoons artificial sweetener.
  7.  Sprinkle peel and sweetener mix over batter in each muffin cup.
  8. Bake on centre shelf for 20 to 25 minutes, or until golden brown.
  9. These muffins are best served hot.

Ingredients

  • 1 Tbsp vegetable oil
  • 2 Tbsp finely diced celery
  • 2 Tbsp finely diced onion

  • 1 C peeled, diced,
  • 1/2-inch raw potatoes
  • 2 Tbsp chopped fresh parsley
  • 1 C water

  • 1/4 tsp paprika
  • 2 Tbsp flour
  • 2 C low-fat (1%) or skim milk

Directions

  1. Heat oil in medium saucepan.
  2. Add celery, onion, and green pepper and saute for 2 minutes.
  3. Add corn, potatoes, water, salt, pepper, and paprika.
  4. Bring to a boil; reduce heat to medium; and cook, covered, about 10 minutes or until
    potatoes are tender.
  5. Place 1/2 cup milk in a jar with tight fitting lid.
  6. Add flour and shake vigorously.
  7. Add gradually to cooked vegetables and add remaining milk.
  8. Cook, stirring constantly, until mixture comes to a boil and thickens.
  9. Serve garnished with chopped fresh parsley.

  • 6 each graham wafers
  • 1 1/2 tablespoons margarine melted
  • 1 tablespoon gelatin granulated
  • 1/2 cup water cold
  • 1/3 cup water boiling
  • 1/2 teaspoon lemon zest grated
  • 1/2 cup lemon juice
  • 2 tablespoons water
  • 2 cups fat-free cottage cheese
  • 1/2 teaspoon lemon extract
  • 4 large strawberries

Directions

  1. Make fine crumbs, with graham crackers (1/2 cup) and mix thoroughly with melted
    margarine; set aside.
  2. Soak gelatin in cold water.
  3. Combine boiling water
    and lemon rind; add to gelatin; add lemon juice and sweetener, stirring until completely
    dissolved.
  4. Chill until it is the consistency of unbeaten egg whites.
  5. Put 2 tablespoons water, cottage cheese, and lemon extract into a blender or food
    processor and cover; turn to high speed for 10-15 seconds.
  6. Add partially set
    gelatin mixture; turnto high speed 15 seconds or until well blended.
  7. Pour into
    prepared pan. Sprinkle graham cracker crumbs evenly over top.
  8. Wash, hull, and
    dry strawberries.
  9. Slice in halves lengthwise. Arrange on top of cake so that,
    when cut into eight servings (4×2 inches), each will have a strawberry garnish in
    center.
  10. Chill several hours, until set.
