Ingredients

  • 1-1/2 cups cooked (1/2 cup dry) or 1 can (15 oz) garbanzo beans, drained
  • 1/2 cup thinly sliced red onion
  • 1/2 cup diced tomato
  • 1/2 cup chopped green bell pepper
  • 3 Tbsp rice vinegar or apple cider vinegar
  • 2 Tbsp lemon juice
  • 2 tsp olive oil
  • 2 Tbsp minced garlic
  •  2 Tbsp chopped fresh parsley salt and pepper to taste

Directions

  1. Combine all ingredients in a large bowl.
  2. Let marinate at room temperature several hours then refrigerate.
