Cottage Cheese Vegetable Casserole

Ingredients

1 cup carrots, thinly sliced
 
1/2  cup onion, chopped
1 tablespoon reduced calorie margarine
1/2 cup mushrooms, sliced
1 8 oz. package noodles, cooked and drained
2 cup cottage
cheese (low-fat 1%)
1/2  cup milk, skim
1/2  teaspoon salt
1/2  teaspoon basil
1/4  teaspoon thyme
1/8  teaspoon black
pepper
parsley
sprigs, optional
 


Directions

1. Combine carrots, onion and margarine in non-stick skillet; cook on
medium heat until tender.

2. Add mushrooms and cook 5 minutes; set aside Combine remaining
ingredients, except parsley, in large bowl; stir in cooked vegetables.

3. Turn mixture into nonstick 2 quart casserole. Cover and bake at 350F
for 30 minutes or until bubbly.

4. Garnish with parsley before serving, if desired.
